Whiskey is a spirit distilled from fermented grain mash. All bourbon is whiskey, but not all whiskey is bourbon. Bourbon is a tightly regulated, distinctly American subcategory governed by strict legal standards. To be classified as bourbon, the spirit must be produced entirely within the United States from a fermented mash bill consisting of at least 51% corn, alongside other grains such as malted barley, rye, or wheat. It must be distilled to no more than 160 proof and aged in brand-new, charred oak containers at no higher than 125 proof and bottled at a minimum of 80 proof.

Bourbon may be one of the most strictly regulated spirits in the world. Federal regulations prohibit any added colorings, flavorings, or neutral spirits. Water is the only permitted additive. Bourbon presents with a rich amber color and a complex taste from the combination of grain, yeast, water, and barrel char.

Like any product, bourbon is a drink of choice based on taste preference. We discovered Lusty Claw bourbon, which is certified kosher by the OU, but may be best known for its ornate packaging featuring an eye-catching bald eagle head topper.

How Bourbon is Made

The process begins with a mash bill consisting of at least 51% corn, which is milled and cooked with Kentucky limestone-filtered water to break grain starches down into fermentable sugars. Using a traditional sour mash technique, previous fermentation remnants and distillers’ yeast are introduced, and the liquid is fermented for several days.

The fermented wash goes through a two-stage distillation system, producing a high-proof, unaged spirit. The clear distillate is cut with water down to 120 proof and pumped into brand-new, charred American white oak casks.

The barrels are left to age for a minimum of three years inside a Kentucky rickhouse. Shifting temperatures and humidity cause the oak barrels to expand and contract, forcing the liquid deep into the charred wood and back out to draw its amber color, caramel sweetness, and oak tannins.

Lusty Claw

Lusty Claw is a sourced bourbon, which means the brand owners do not operate their own distillery. They purchase aged distillate produced in Kentucky and manage the finishing, filtration, and packaging. It is straight Kentucky bourbon whiskey aged for a minimum of three years and bottled at 90 proof.

The Lusty Claw presents with a deep amber color and golden highlights. The aroma is described as warm waves of vanilla, toasted oak, and caramelized sugar. The taste is rich with flavors of cinnamon and charred oak, finishing with a lingering spice, warmth, and a hint of tobacco. Our tasters felt that Lusty Claw was smooth and light-tasting.

The name Lusty Claw refers to the old English term where ‘lusty’ means full of vitality and robust, and ‘claw ‘ reflects the eagle motif that tops the bottle with its talons, making this bottle distinctive and attention-grabbing.

The bottle is a work of art, as complex as the contents, a stylish, heavy glass bottle with an impressive topper sculpted into the likeness of a bald eagle’s head with an open beak, finished in antique bronze and set on a natural cork closure. Directly beneath the topper, a decorative braided cord and tassel wrap around the slender glass neck to reinforce its vintage aesthetic.
