Travel the World Without Leaving your Kitchen – Pereg Spices

Cooking is more than nutrition, food preparation, especially the aromas and flavors of cooking, allows the chef to transport diners to another place and time. When I am preparing meals, the house takes on an intoxicating aroma, an invitation to eat. A whisp of smell creates warmth, and anticipation – like the rich warmth of cardamon, deep earthiness of nutmeg, or sharpness of cayenne. The fragrances of spice combinations make your mouth water.

As a kosher cook, finding the right spices with certification can be challenging, which is why I have a variety of Pereg spices in my pantry.  Being able to reach out and select a high-quality seasoning is an advantage and saves time, especially when you want to quickly throw together a meal or a side dish.

The Pereg Story

Simple Sumac Onions Recipe adapted from “Zahav: A World of Israeli Cooking” by Michael Solomonov and Steven Cook (Houghton Mifflin Harcourt).

Ingredients:

  • 1 red onion, thinly sliced or finely diced
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground sumac
  • ½ teaspoon kosher salt

Method:   Combine all the ingredients in a bowl and toss to combine. Serve immediately.  Makes about 1 cup.
