Chef’s Corner – Chanukah Apple-Onion Chutney from the UN Plaza Grill’s Ines Chattas

Argentinian-born Ines Chattas is the new Culinary Director of UN PLAZA GRILL. Chattas, is the first Jewish woman to be in charge of the restaurant’s menu since it opened in late 2017. She will be revitalizing the menu, making it more contemporary, and expanding its international influences.
The UN Plaza Grill launches Chattas’ new menu on November 28, right in time for Chanukah. She shared the recipe for her apple-onion chutney recipe, an item featured on the menu. The chutney is a perfect accompaniment for Chanukah or Shabbos.
APPLE-ONION CHUTNEY Courtesy of Ines Chattas
Ingredients:

- 6 Granny Smith apples, peeled and sliced
- 1 large onion, minced
- 2 tablespoons olive oil
- 1 cup apple cider vinegar
- 1 teaspoon of lemon zest
- 1 teaspoon coarse salt
- 1 demi spoon white pepper
- 1 piece cinnamon stick
- 1 cup brown sugar
- 1 demi spoon nutmeg
Method:
Heat oil in a medium saucepan over medium-high heat. Add onion, and sauté for about 5 minutes until translucent. Stir in apples, cinnamon, nutmeg, salt, pepper, sugar, and lemon zest. Cook for about 3 minutes. Add vinegar and bring to a boil. Reduce to a vigorous simmer, and cook, partially covered, until apples are tender for about 10 minutes. Serve warm or room temperature.
