Beet Hummus Recipe – UN Plaza Grill

Ines Chattas graciously shared her recipe for beet hummus. This colorful side dish, while not on their menu, will dress up your table for Shabbos.
BEET HUMMUS (a recipe from Ines Chatta – UN Plaza Grill)
Ingredients:

- 1 can chickpeas, drained
- 2 medium beets, boiled and peeled
- 2 chopped garlic cloves
- 2/3 cup of tahini
- Juice of 1 lemon (approximately 2 tablespoons)
- 1 cup olive oil
- 1 tsp cumin
- Salt and pepper to taste
Method:

- Combine the chickpeas, tahini, beets, lemon juice, half of the lemon zest, garlic, cumin, and salt in the bowl of a food processor (I used an immersion blender for hummus that is less fine).
- Slowly drizzle in the olive oil and blend until smooth.
- Taste and adjust seasoning as needed

Garnish:
- Pinch of fresh chopped parsley
- ¼ cup chopped pistachios
- 1 oz lemon zest
Presentation:
Serve in a bowl and sprinkle parsley, remaining lemon zest, and pistachios as toppings and finished off with a drizzle of olive oil.
